Use a pan size as specified by the recipe to get perfect results. Baking in a pan whose size is larger than specified often yields thin and dry bars. Choose a light coloured shiny pan that conducts heat well and grease it thoroughly with softened butter. Use aluminium foil to line the pan and grease before pouring in the brownie mixture. This helps to lift the brownies without breaking once they are baked. Place unbaked butter in the pan and refrigerate overnight to improve the texture of the brownies. While melting butter and chocolate make sure you stir the mixture constantly. While attempting a chocolate fudge brownie recipe, bake until the sides have shrunk away from the pan edges and the centre is gooey. Place the pan into the freezer for few minutes and use a knife dipped in hot water and wiped to cut the brownies. These brownies will keep in the refrigerator for about five days. Store the brownies in air tight containers to retain texture and flavour.

i love your blog, i have it in my rss reader and always like new things coming up from it.
Had a craving to look up riecpes for bacon brownies after watching Guy Fieri’s Diners, Drive-ins and Dives show where they mentioned bacon brownies. It was just last year that I started hearing about using bacon mixed with sweet foods. I made a batch of bacon fudge for Thanksgiving. It was ok for a bite or two, but I quickly decided I preferred the plain variety. However, because the recipe also called for maple extract, I have since started adding maple extract (but no bacon) to my fudge and I’m really digging it!Bacon appetit!
I’m glad to hear that you’re enjoying your cookies!
I’m trying to perefct this recipe from scratch (I’m on my fifth revision). I’m finding you really need to compensate for the additional grease the bacon adds to the recipe by cutting your butter or oil by a third otherwise, they tend to be too greasy. I agree with the other posters about cutting up the bacon much better product in the end. I suggest mincing it and then cooking it until the pieces are barely crisp and then draining it, stirring it into the batter at the end. And definitely use the bacon grease instead of butter when flouring the baking pan to add more flavor. For some kick, I add a chopped chipotle pepper in adobo sauce (a scant tablespoon worth for a standard 9 x 9 pan recipe) stirred in at the end as well.
Thanks for the tip mate! Will definitely try them out!

I have made these brownies 4 times now, each time trying the adjustments suggested by previous reviewers. I have discovered that the only adjustment necessary is the cook time…reduce from 45 min to 35-38 min. This yielded a deliciously moist brownie with great chocolate flavour. Note: I will admit that I do find it a tad too sweet, however when I reduced the amount of sugar it turned into an inedible dry clump. Would love suggestions on how to reduce sugar content without sacrificing the moistness.
You’ve got a fine blog there keep it up.
I’ll be watching out for most posts.
